Yet all good things must come to an end and it’s time to begin clearing out the beds so we can prepare them for next growing season which, by the way, begins in February :) .

eggplants galore!

eggplants galore!Today was the zenith of our eggplant harvest; eleven in all and there are many more still growing. All this from six happy plants. Needless to say I have been using them as quickly as I can manage but finally had to admit that I have more than I can possibly use before they start to decline. So most of these will be given away to some lucky coworkers. Some readers will scold me for not freezing my harvest for use in the dead of winter. The truth is that we have limited freezer space in our kitchen and I’m ambivalent about getting a chest freezer for our garage because of the extra electricity it would consume. Of course I would probably save a lot more in food costs than the added cost of the freezer and the electricity. And I would be increasing my consumption of locally grown food and reducing my consumption of food that has been transported across the globe. Hmm, I’m starting to sell myself on the idea.
